The Magic Took A Time Out!

Oh, my BYU Cougars! The magic just wasn't there tonight. A sad loss to TCU. Wow, were they good! It was 90* outside today, but I had the air on and chilled the house so we could enjoy a big pot of chili and even made some BYU mint brownies to celebrate the win. Well, we ended up eating them for consolation instead.

But I'll share the recipe here with you , because whether it's a win or a loss, these are awesome!

BYU MINT BROWNIES

1 cup margarine

1/2 cup cocoa

2 Tbsp. honey

4 eggs

2 cups sugar

1 3/4 cups flour

1/2 Tbsp. baking powder

1/2 tsp. salt

1 cup chopped nuts (optional)

12 oz. chocolate frosting

Melt margarine and mix in cocoa. Cool. Add honey, eggs, sugar, flour, and salt. Mix in nuts. Bake in greased 9 X 13 pan at 350* for 25 minutes. Cool.

MINT LAYER

5 Tbsp. margarine, softened

dash of salt

1 Tbsp. light corn syrup

2 1/3 cups powdered sugar

1/2 tsp. mint extract

1-3 drops of green food coloring

3 Tbsp. milk

Mix margarine, salt, corn syrup, and powdered sugar until fluffy. Add mint extract and food coloring. Add milk one tablespoon at a time until the consistency is a little thinner than frosting. Spread evenly on top of the brownies and put in the freezer until it stiffens. Remove and carefully frost with the chocolate frosting. Cut and serve.

( Busy day. Got clean sheets on Christine's bed, vacuumed her room really well, turned over the mattress, did 6 loads of laundry, got some more Halloween decorations out, dinner, watered all the pots, did visiting teaching calls, put wedding ribbon away. Duff picked tomatoes off of two more plants and pulled them up. We have one plant left that is producing still and we will eek out all we can from it.)
