
I am home now in California. I can hardly believe that this morning I started my day with snow, and I'm ending it in air conditioning!
Not only did Duff hold down the fort wonderfully while I was gone, but I came home to a HUGE batch of Caramel Corn! I had wanted to make some before I left but never got around to it. So he rallied the troops (Mike, Adrianne, Christine) and each had a 'job'. Mike and Christine popped the popcorn, he mixed the caramel, and Adrianne had the important task of mixing and stirring it all together. It is divine! So gooey and sticky! You know it's fall when you suddenly start 'tasting' Caramel Corn in your mind.
Here is the recipe:
1 1/4 cups brown sugar
1/2 cup light karo syrup
1/2 stick butter
1/2 can sweetened condensed milk
popcorn, popped (about 1 gallon)
Pop corn (either several air batches, or old fashioned in the pan, or several bags microwave, unbuttered). Put in large bowl and set aside.
Combine brown sugar and karo syrup. Bring to boil, stirring constantly with wooden spoon for about 8 minutes.
Add butter and sweetened condensed milk and blend until smooth with wooden spoon or wire whisk. Cook and stir another 4-5 minutes.Pour over popcorn and mix evenly. Turn it out onto waxed paper to cool.
(You can double this batch, which is usually what we do)
