I've discovered lately that the cable company has some great music channels. Today I was in the mood for some light classical. It was inspiring and soothing as I did laundry and cleaned, cleaned, and cleaned, and picked up, and sorted through 10 days worth of mail, paperwork, and wedding details.
Christine went babysitting at 5:30 for the Green's, and Duff and I decided we would go grab some dinner at one of our FAVORITE mexican food restaurants: Super-Mex.
Now Super-Mex is the 'real' deal. A husband and wife, Mr. and Mrs. Orozco, started it in 1974 on First Street in Long Beach, CA. I remember going there. It is truly nothing more than a 'hole-in-the-wall' place. Folding tables and folding chairs with no frills. They became successful enough that they decided to try another place on Pacific Coast Highway in Huntington Beach. This site is right on the beach, and again, tiny and no frills. BUT--the food is to die for! Over the years they now have 12 locations and all of them are family owned and operated. They don't open another one unless the family can do it. They are only open from 11am to 9pm---yes that's right, they close promptly at 9pm every night. That's how good it is. They don't need to stay open any later than that. And so the line to get in will wrap down the sidewalk.
Hot, fresh tortilla chips with fresh salsa, and very basic, straightforward entrees or ala cartes. Burritos, enchiladas, tacos, chile rellanos, tamales. You can make any combination you want.
Mike and Adrianne decided to join us and we had a nice, casual evening. A great ending to a good day of getting things done.
