Mexican Beef and Noodle Skillet

This is the recipe that Christine learned in YW two weeks ago and then made it for us for dinner the next week.  I googled this picture, so it isn't her's but you get the idea.  Everything in ONE pan and you sit down to dinner in less than 30 minutes!  Add a nice green salad and you are good to go.

This picture has olives in it.  Her recipe didn't call for olives, but they would probably be good in it.

Ingredients:

1 lb. extra lean ground beef
2 cups (four ounces) uncooked medium egg noodles
1 cup frozen corn
1 cup sliced green onions
1 cup water
1/2 cup of your favorite salsa
2--8 oz. cans tomato paste
1/2-1 cup shredded cheese

In large skillet brown the beef and drain.  Add all remaining ingredients except cheese.  Mix well.  Bring to a boil.  Reduce heat to low, cover, and simmer 10-12 minutes or until the noodles are of desired doneness, stirring occasionally.  Remove cover and sprinkle with cheese.

Yield:  4 (1 1/2 cups) servings.

(we didn't have any green onions, so she used 1/2 a medium yellow onion, diced, and cooked it while she browned the meat.  It worked fine.  She also doubled the recipe since we had 6 people for dinner that night.)
