Lemon Blossoms

Busy day today.  Clean the church building, weeding the garden and getting rid of the snails, grocery shopping and running errands with Adrianne, wedding reception, and make and take a dessert to the missionary fireside/open house at the bishop's tonight. 
What to make?  What to take?
Hmmmmm.
Lemon Blossoms.  Small, light, and refreshing, but distinctively unique.  Kind of like that old Lay's Potato Chip commercial--bet you can't eat just one!


LEMON BLOSSOMS

1--yellow cake mix
1--small instant lemon pudding mix
4--large eggs
3/4 cup canola or vegetable oil

1.  Preheat oven to 350*.  Spray mini muffin tins with Pam.
2.  combine the cake mix, pudding mix, eggs, and oil and blend well until smooth for two minutes.
Scoop a small amount of batter (about 1 tablespoon) into each cup of the prepared tins.  Bake for
11-12 minutes, depending on your oven.  Turn out onto a clean kitchen tea towel.

Glaze
4 cups powdered sugar
1/3 cup fresh lemon juice (about 2 lemons)
Grated zest of one lemon
3 Tbsp. canola or vegetable oil
3 Tbsp. water

1.  Sift the sugar into a mixing bowl.  Add the lemon juice, zest, oil, and water.  Mix with a spoon or whisk until smooth.  Dip the little cakes into the glaze while they are still warm, but not hot covering as much as possible.
2.  Place on wire rack over sheet pan or a large piece of waxed paper underneath to catch any drips.  Let the glaze set thoroughly (this may take an hour) before storing in container with tight-fitting lid.

Yield:  60, but I only get 48-50.
I also use 1/2 cup lemon juice and I like to gently stab the bottom side of the little cake blossom with a dinner fork and dunk it in the lemon glaze, then carefully take it off onto my wire rack to set.  It all gets covered and the fork holes don't show and your hands are not all sticky from the glaze!  I have also used a lemon cake mix in place of the yellow cake mix, and it is even more lemony.  Very good.  In fact some people I've served this too prefer it with the lemon cake mix.

This is a very rustic looking finger dessert.  So presentation is everything.  Add a twisted lemon slice or some mint sprigs or even some single lemon leaves on your serving dish.

p.s.  the fireside was great.  Alex Williams spoke on his mission to India which included Pakistan, parts of Afghanistan, and Nepal.  I was clueless in my own little world, at what the gospel is doing over there and how it is advancing.  No question for me that the Lord is in charge and it is on His timetable.

Those are the cake plates from Costco no? Unless they are from like your wedding! Anyway, I was coveting those very ones today.
